Summer weather means time for barbecues, pool parties, weekend getaways and countless hours on the beach. Jam packed weekend schedules sometimes make it easy to over indulge, but with a little preparation it's simple to stay on track! We've prepared a summer salad recipe that is hearty, delicious and only requires a handful of ingredients! This salad is easy to pack in a container for the beach or bring to a friends barbecue.
2cups corn, fresh
1 cup farro
1 cuptomatoes, halved
1/2cup diced red onion
1/2teaspoongrated lime zest
1tablespoonfresh lime juice
1. Cook the farro according to directions on the bag. Rinse the farro under cold water and place in a large bowl. Toss with 2 tablespoons of olive oil. Set aside
2. Heat 1 tablespoon olive oil in a large skillet over medium high heat. Add the corn and cook for about 3-4 minutes, stirring often.
3. Stir the corn mixture into the farro along with the cucumbers, tomatoes, and red onions. Add the lime juice, lime zest and chopped cilantro. toss and season with salt and pepper to taste
